This is another one of my "go to" recipes. It's also one of my husband's favorite meals. Be forewarned it's a little spicy. You can adjust the level of spiciness by adding more or less of the chipotle. I usually serve this with a dollop of sour cream and a mini heirloom tomato and avocado salad. The salad is dressed with some salt, pepper, dried oregano, extra virgin olive oil, and red wine vinegar. For the pie recipe click here.
