I bumped into this recipe while looking through cookbooks at Barnes and Noble. The flavor combination sounded so good to me that I decided to make it for our Father's Day brunch. I must say these were quite delicious. Even my non-veggie eating husband liked them. Of course I didn't mention they had veggies until he finished eating one of them. Here is the recipe. Just an FYI I added about 1/4 cup of sweetened shredded coconut and used golden raisins.
{strawberry preserves were a wonderful touch}
