As we dwindle down to the last few weeks of summer I find myself wanting to indulge in the foods of the season; ice cream, froyo, fresh fruits and veggies to name a few. Enter these popsicles. I toyed with the idea of using purees from two of my favorite tropical fruits mamey (pronounced ma-may) and passion fruit. The creamy French Vanilla yogurt middle brought both flavors together quite nicely. Here is what you will need:
Popsicle molds or paper cups and wooden sticks
7oz of Mamey pulp (available in the frozen section of your supermarket)
7oz of Passion Fruit pulp
1.5 cups of French Vanilla Lowfat Yogurt
1tsp vanilla extract
Honey to sweeten
Defrost the pulps in separate bowls add honey to sweeten to your liking.
Add vanilla extract and a squeeze of honey to yogurt.
Layer mamey, yogurt, and passion fruit pulp into popsicle molds and freeze for at least eight hours.
Enjoy!
